Meet The Clementine.

Hospitality veteran Jonah Dill-D’Ascoli began the idea of The Clementine in 2016 as a way to reexamine the hospitality industry to make it safer, more inclusive, and sustainable. That same year his daughter was born, and the idea was put on hold. In 2020 when the Covid-19 pandemic struck, the idea for The Clementine sprouted again. It became clear that as the industry attempted to rebuild in the aftermath of the pandemic, there was a need to support those entrepreneurs and workers who were struggling to rebuild their livelihoods.

Drawing on his years of experience and passion for building sustainable and thriving communities, Jonah took the leap and officially formed The Clementine. The initial idea was to help by setting up sustainable beverage programs; it quickly became clear that for that to be accomplished, it would require more then just a few cocktails on a menu. It would require examining supply chains, setting systems in place, educating, and positive community building. Only once those pieces are in place can the fun of a creative beverage program be realized.

From this ideology The Clementine has grown into a full-suite beverage and hospitality consultancy. While our roots are still in traditional bars and restaurants, we have now branched out to include a diverse range of clientele, from corporate and special events to new entrepreneurs, looking at ways to “raise the bar” (pun totally intended!)
